In The Pantry with Morgan McGlone
Chef and Partner of Bar Copains, Alma's, and Bessie's, Morgan McGlone let's me in on his ideal day of eating in Sydney.
If you live in Sydney, you will likely be familiar with the name Chef Morgan McGlone. My journey with Morgan’s culinary genius began around 2016 with Belle’s Hot Chicken, later when I first moved to Sydney in 2021, nothing quite felt like home like the roast dinner at Sunday in Potts Point. Now, you will often see me outside Bar Copains sipping on a glass of crisp white and dining on a Pig’s Head Fritti.
I asked Morgan to write me an itinerary of his ideal day of eating in Sydney then we chatted about his newest project Bar Vincent, and which now-closed Sydney restaurant he would bring back. Bon appétit.

Snack time… For snacks I usually hit up Da Bang Coffee in Surry Hills, they have exceptional coffee and insanely good cookies.
For dinner… Has to be Fratelli Paradiso or Bar Vincent. They are the best in class when it comes to that night time action. I love to eat at 5:30pm and be done by 7:45pm and they both can accommodate this.
For drinks… I really like Amuro Sake Bar and PS 40. For wine it’s always 10 William St.
Talk to us about the takeover of Bar Vincent - What inspired this decision? It’s a Chef favourite and the current owners wanted to sell it to us. We are looking forward to continuing their legacy of this incredible venue.
And if you could bring back any now-closed Sydney restaurant, what would it be? Cirrus… it was such a great place. Exceptional wine list and the food and service were world class. I really miss that place.
